How to make a simple dessert that looks like you spent hours on!
Creme brulee requires so little ingredients, that there is no reason for you to not give it a try! It's also a FANTASTIC make-ahead-of-time dessert... Make it 3 days ahead and store them in the fridge until you're ready to wow guests! The caramelized sugar should be done right before serving.
2 egg yolks
1/4 cup sugar
1 cup heavy whipping cream
1 teaspoon pure vanilla extract (or 1/2 of a vanilla bean pod)
Whisk the yolks and sugar for a few minutes until mixture turns a light shade of yellow.
Over medium heat, bring your heavy cream to a simmer (NOT BOILING!).
Slowly stream your hot heavy cream into the yolk mixture. Whisk as you stream in the cream! This is very important to avoid scrambling your egg yolks.
Once all the cream and yolk mixture is mixed together, add vanilla and stir until combined.
Ladle equal amounts into two 4oz ramekins. Place a dish towel inside a roasting pan, and set your ramekins on top. Then pour hot water into roasting pan and make sure to not get the water into the ramekins. Bake in a 300 degree (F) oven for 40-45 minutes. The custard will look set, with the centers just barely jiggling. Cool to room temperature, then fully cool in the fridge for at least 4 hours.
When ready to serve, place 1 tablespoon sugar on top of the creme brulee, and use a torch to melt and brown the sugar. Cool for a minute. Serve immediately.
